Not all poppies are the same! Did you know that there are over 100 poppy varieties worldwide? And the best-known variety, the corn poppy with its red flowers, is not edible at all! You should also keep your hands off many other varieties, because all parts of the plant, but especially its milky sap, are poisonous. Only the seeds of the blue, grey and white poppy are suitable for consumption and are used in many foods. But how do the edible varieties differ? First of all, the colour of the seeds is decisive. As the names suggest, those of the blue poppy are blueish-black, those of the grey poppy light grey and the seeds of the white poppy bright white. The poppy varieties also differ greatly in taste: while the white poppy is characterised by its nutty aroma, the grey poppy tastes rather mild. The blue poppy has an intensely spiced favour and is the most cultivated poppy variety.

For stuffing:
1dl milk
200g sugar
400g finely ground poppy seeds
50g raisins
50g vanilla sugar
2 tbsp apricot jam
2 tbsp honey
1 lemon

For lubrication:
1 egg
For the dough:
20g fresh yeast
0,5 dl milk
50 g of flour
60g icing sugar
1 pinch of salt
250g butter
1 egg
3 egg yolks

Preparation

For the poppy seed bagels, mix the yeast with milk. Add icing sugar and salt to the flour, then crush in the butter. Mix the egg with the yolks and yeast and add to the crumbs and knead into a flexible dough. Wrap the finished dough in foil and refrigerate for at least 30 minutes.
While the dough is resting, prepare the poppy seed filling. Pour the milk into a saucepan, add the sugar and bring to the boil. When ready, remove from the heat and stir in the poppy seeds, raisins, vanilla sugar, jam, honey and grated lemon zest. Cool completely before filling.
Shape the dough into four identical buns, roll them out not too thin, fill them with the poppy seed filling and roll.
Place the sticks on a baking tray lined with baking paper, pierce them with a fork and brush the surface with egg. Leave to rest for an hour and a half, then spread again and bake in a 170 °C oven for approx. 35 minutes until golden brown.
This is a Hungarian recipe where the poppy seed gets its due.
