Freeze-dried – What is that?

Freeze-drying preserves much of the flavour and colour compared to non-dried blueberries. For freeze-drying fruits we use a trick from chemistry called sublimation. Sounds complicated, but it simply means that frozen water immediately changes from a solid to a gaseous state when it is in a vacuum. To preserve our fruit, it is first frozen at low temperatures. Then a vacuum is created and the frozen water turns directly into water vapour. This allows us to extract almost all the water from the fruit without changing its shape. Then our freeze-dried wild blueberries are ground into powder and ta-da: our freeze-dried fruit powder is ready!
