Flavoursome olives from Greece

Kalamata olives, also called Kalamon olives, are a traditional Greek olive variety grown on the Peloponnese peninsula, in the Kalamata region. Due to their mild, buttery aroma, the black olives are often used for the production of olive oil. Unlike green olives, the dark, almond-shaped table olives have a firm bite and a soft, fleshy texture.

Our black olives are harvested by hand and then naturally fermented. For this purpose, the fruits are traditionally pickled in a brine made of water, vinegar and sea salt. This gives the Greek olives their unique buttery and full-bodied flavour. The flavour develops over time: At first, the olives taste a little bitter due to the salt-vinegar brine, then they develop their fruity and aromatic sweetness - a unique taste experience that you can now enjoy at home!

Black olives as tasty allrounders

Our Greek olives bring a pinch of Greek flair into your kitchen: they are ideal for preparing hearty Greek tapenade and fresh dips or for spicing up salads. Of course, you can also use them for homemade olive bread, black olive pesto or as a spicy cooking ingredient for Mediterranean recipes. Our Kalamata olives come from controlled organic cultivation directly from Kalamata in Greece.
Kalamata olives are considered a traditional, Greek olive variety. They are grown exclusively on the Peloponnese peninsula. There, the black olives grow on large, sunny olive tree plantations. After harvesting, the fruits are fermented in a vinegar-salt brine.
The dark Kalamata olives are rich in unsaturated fatty acids. 100 g of the olives have a total of 240 kcal.
The special feature of Kalomon olives is that, unlike green olives, they are harvested only when fully ripe. This dark olive variety is known for its strong and juicy flavor. Kalamata olives have a particularly spicy and at the same time slightly salty aroma. Since they cannot be distorted raw due to the bitter substances they contain, Kalamata olives are cured in salt water and pickled in wine vinegar until they acquire their incomparable aroma. So that the unique taste of the Kalamata olive is not lost, you get the high-quality olives with stone with us. So they taste even more intense.
If the olives are stored in a cool and dark place, they can be kept for 1 year when closed. Once opened, the Kalamata olives should be stored in the refrigerator and consumed within 2 weeks.

Kalamata Oliven gehören zur Sorte der griechischen Kalamon Oliven. Auf der griechischen Halbinsel Peloponnes in der Region Messinien befindet sich der Ort Kalamata. Hier wurden schon 13 v. Chr. auf zahlreichen Feldern die berühmten Kalamata Oliven angebaut. Auch heute schmücken noch zahlreiche Felder die Umgebung Rund um die Hauptstadt. Die hügelige Landschaft direkt an der Meeresküste eignet sich klimatisch ideal für den Anbau reifer schwarzer Tafeloliven. Kalamata Oliven heißen die Früchte dieser Sorte aber nur, wenn sie auch wirklich aus der Region stammen, da es sich um eine geschützte Ursprungsbezeichnung handelt.

Seit Jahrtausenden prägen Olivenbäume die griechische Landschaft. Die Bäume gehören zur Gattung der Ölbaumgewächse. Der von Natur aus immergrüne Olivenbaum liebt die Wärme und kann sogar längeren Trockenperioden standhalten. Je nach Sorte erreichen die Sträucher eine Wuchshöhe von 10 bis zu 20 Metern und werden zwischen 300 und 600 Jahren alt.

Allein im Mittelmeerraum gibt es über 1000 verschiedene Sorten von Olivenbäumen, die sich je nach Klima und Bodenbeschaffenheit unterscheiden. Erst nach sieben Jahren bilden die mediterranen Gewächse ihre Früchte aus. Dabei ist die Farbe der Oliven nicht von der Sorte des Baumes abhängig: Grüne und schwarze Oliven unterscheiden sich nur bezüglich des Reifegrades, denn während die geschmacksintensiven Schwarzen bereits ausgereift sind, werden die milden Grünen unreif geerntet. In der Regel handelt es sich aber um unterschiedliche Sorten der Olivenbäume, da sich die einen eher für die Produktion der schwarzen und die anderen für die der grünen Oliven eignen.

Zwischen Ende April und Anfang Juli blüht der Olivenbaum. Seine Blütenstände können bis zu 40 Blüten tragen. Aus ihnen entwickeln sich in den Sommermonaten einsamige Steinfrüchte – die Oliven. Wie schnell der Reifeprozess fortschreitet, hängt von den Sonnenstunden und der Temperatur, aber auch von der jeweiligen Sorte ab.

Während die Kalamata Olive wächst, durchläuft sie verschiedene Reifegrade. Grüne Oliven sind noch nicht vollgeständig gereift, werden aber für die Produktion von hochwertigem Olivenöl geerntet. Sobald die Olive vollständig zu reifen beginnt, wird sie rötlich-violett und anschließend schwarz. Mit zunehmendem Reifegrad verändern sich auch die Inhaltsstoffe der Olive. Reife Kalomon Oliven sind besonders bissfest und haben während ihrer Reifung ein einzigartiges, würziges Fruchtfleisch entwickelt.

In Griechenland gilt die Winterzeit als Erntezeit. Von Oktober bis März werden im Süden der griechischen Halbinsel Peloponnes unsere reifen Oliven noch von Hand geerntet. Dafür werden die Tafeloliven einzeln gepflückt oder mithilfe von langen Stäben von den Bäumen gekämmt. Unter den Olivenbäumen liegen Netze und Planen, die die gelösten Oliven auffangen und sammeln. Die Art der Ernte ist typisch für die Region Messinien und geht bis ins Antike Griechenland zurück.

Kalamata Oliven können, wie alle anderen Olivensorten, aufgrund der enthaltenen Bitterstoffe nicht roh verzerrt werden. Nach der Ernte werden die Oliven daher zunächst durch ein Wasserbad entbittert. Anschließend gelangen die Früchte gepökelt in eine Salzlake, wobei auf keinen Fall der Kern entfernt oder verletzt werden sollte. Schlussendlich werden die Kalomon Oliven für einen Zeitraum von bis zu 10 Monaten in eine erneute Lake aus Meersalz, Wasser und Essig eingelegt um vollständig ihre Bitterkeit zu verlieren. Die Zusammensetzung der Lake bestimmt das endgültige Aroma der Tafelolive. Der Stein der Olive wird auch nach der Fermentierung nicht entfernt.

Delicious

I used to go to Greece very often and their olives were delicious. We changed destination and I couldn't find black olives to my taste...and now, since I've found my beloved Kalamata olives, I can't stop eating them, plain l'am, in Greek salads, samoussas, ..., I love them!!!! Roko is a safe bet, I'll be recommending it for sure!
