Ingredients
- ripe bananas: 3 pieces
- linseed: 1 tbsp
- Water: 3 tbsp
- Oat flakes / oat flour: 250 g
- Cashew nuts: 150 g
- Baking powder: 3 tbsp
- Salt: 1 pinch
- Cinnamon: 1 pinch
- Plant milk: 150 ml
- Maple syrup: 75 ml
- Coconut oil: 1 tbsp
- Nuts: 1 handful
- Banana: 1 piece
Preparation
Step 1
Preheat the oven to 180° degrees. Mix the linseed with the water and set aside.
Step 2
Grind the rolled oats and cashew nuts in a blender. Mix all the dry ingredients together.
Step 3
Now add the bananas and all the liquid ingredients to the blender and puree.
Step 4
Then mix both mixtures together to form a smooth batter and fold in the linseed egg.
Step 5
Pour the batter into a greased loaf tin, place a few nuts and another banana on top and bake for approx. 45 minutes.
Step 6
This healthy, sugar-free banana bread is also perfect for breakfast with some nut butter, jam or simply on its own.
