Apple cinnamon granola

No store-bought granola can replace homemade granola! There is really nothing better than the smell of freshly made granola in the house. Not only is this granola perfect for the cold season, but it comes without sugar or oil. The oil in this recipe is replaced by aquafaba (chickpea water). Sounds strange at first, but the granola becomes super crunchy and delicious.

Apple cinnamon granola



Preheat the oven to 160 degrees top and bottom heat. Mix the rolled oats with the chia seeds, nuts, coconut blossom sugar, salt and cinnamon in a large bowl. Whip the chickpea water with a hand mixer until stiff (takes 5-10 minutes) until you have a firm "beaten egg". Now add the maple syrup and vanilla to the "beaten egg" and mix again briefly (don't over mix!) Pour the "beaten egg" over the oatmeal mixture and mix well. Bake everything in the oven for 25-30 minutes until golden brown. Halfway through mixing the granola. Especially at the end, be careful not to burn it. Let it cool down and fill it into glasses. Now you can cut the apple rings into small pieces and mix them with the mulberries into the granola.

Tip: the granola will become crunchy as it cools. Do not wait for it to crisp in the oven or it will burn!
