Cauliflower curry with naan

Fancy a trip? How about a quick trip to India and back - in just 30 minutes. The recipe for the vegetarian cauliflower curry with naan will catapult you to New Delhi in no time, surrounded by the spicy smell of culinary delicacies.

Cauliflower curry with naan

Ingredients

Preparation time: 30 minutes | Waiting time: 1 hr.

You will need: Kitchen scale | bowl | food processor, dough hook | dish towel | peeler | knife |cutting board| grater | 2 pots, lids | rolling pin | pan, cast iron | brush

For the naan bread:

For the curry:

  • 1 cauliflower
  • 400 g potatoes, firm boiled
  • 1 clove of garlic
  • 20 g ginger
  • 1 chili pepper, red
  • 2 tbsp. sesame oil
  • 1 tsp curry powder
  • 1 tspturmeric
  • 1 tsp cumin, ground
  • 400 mlcoconut milk
  • 200 ml water
  • 100 g sugar snap peas
  • 0,5 bunch coriander
  • 1 lime, organic
  • salt
  • Pepper

Preparation

Step 1

For the naan bread, combine flour, salt and dry yeast in a large bowl. Add yogurt and water to the flour and knead the dough in a food processor fitted with a dough hook or by hand for about 10 minutes. Cover with a kitchen towel and let rest in a warm place for about 30 minutes.

Step 2

In the meantime, cut and wash the cauliflower florets. Peel the potatoes and cut into small cubes. Peel and finely grate garlic and ginger. Wash the chili pepper, cut lengthwise and remove the seeds and cut into fine strips.

Step 3

Heat sesame oil in a pot. Add cauliflower, potatoes, garlic, ginger and chili and lightly fry for about 1 minute. Add curry powder, turmeric and cumin and sauté over medium heat for about 1 minute. Add coconut milk and water, place lid on pot and cook over medium heat for about 10 minutes.

Step 4

Meanwhile, shape naan dough into ball of about 90g each and let rest covered for about 10 minutes. Dust balls with flour and roll out with a rolling pin to about 10cm in size. Heat ghee in a saucepan. Heat cast iron pan without fat and bake naan bread for about 4 minutes on each side. Brush with ghee and sprinkle with sesame seeds.
