
The noodle salad brings a lot of Asian flair into your kitchen. The accompanying dressing, which gives the soba noodles a delicious peanut flavor, tastes especially good. By the way, if you don't like cilantro - fresh parsley is also good!
Ingredients for 1 serving
For the noodle salad:
- 80 g soba noodles
- 100 g tofu
- 1 carrot
- ¼ red cabbage
- 1 spring onion
- ½ bell bell pepper
For the dressing:
- 1½ tbsp. peanut butter
- 1 tbsp lime juice
- 1 tsp. rice vinegar
- 1 tsp tamari
- ½ tsp miso paste
- 1 tsp maple syrup
- 1 tsp sesame oil
- ½ tsp garlic powder
- ½ tsp ground ginger
- 2 tbsp water
For the garnish:
- 1 handful cilantro
- 1 handful peanuts
- 1 tsp sesame seeds
Preparation
- Cut the tofu into cubes and bake in the oven at 200 degrees for about 15 minutes until crispy, turning in between.
- Cook the noodles according to package instructions. Cut the vegetables into thin slices.
- Mix the ingredients for the dressing.
- Mix the cooked noodles with the dressing, vegetables and baked tofu.
- Sprinkle with the cilantro, peanuts and sesame seeds.
- Eat the salad either warm right away or let it cool and enjoy.
