
The more diverse the ingredients, the more fun it is to eat a vegetable bowl. Our hearty lunch or dinner is bursting with different ingredients. And the consistency is surprising, too - sometimes you bite into soft avocado, sometimes crunchy nuts or firm-to-the-bite lentils.
Ingredients for 1 person
- 50 g quinoa
- coconut oil
- ½ small pumpkin
- ½ red onion
- 1 normal sized sweet potato
- approx. 100 g broccoli
- 3 tablespoons cooked lentils
- Peas of your choice
- A handful of mushrooms
- ½ small zucchini
- Salt
- Pepper
- Cayenne pepper
- Curry
- Topping: avocado, hemp seeds, nuts,...
Preparation
- First cook the quinoa for about 15 minutes, and the sweet potato for 20 minutes.
- In the meantime, chop the remaining vegetables into small cubes.
- Then heat a teaspoon of coconut oil in a non-stick pan and fry the vegetables.
- Add a little water, and add the spices.
- Once the potato and quinoa are ready, add the ingredients to the pan and simmer together briefly.
- Top the delicious vegetable mix with an avocado and hemp seeds - also very tasty with cashews and almonds!
