Agave from Mexico

Although the plant is now quite well known and popular in Germany, there are certainly a few things you didn't know about it. Agave is not just agave - there are a lot of different species that differ greatly from each other. We make our agave sugar from the blue agave, or "Agave tequilana". A little fact on the side: this is also the type of agave from which tequila is made! You can recognise it by its leaves, which are arranged in a radiating rosette, and its blue-green colour - very similar in appearance to aloe vera! Just like the aloe vera, the agave plant originates from Mexico. There, at an altitude of 2,500 metres and a temperature of 10 to 15 degrees, the optimal conditions for agave to grow. So how do you extract crystalline sugar from the plant? It's easy peasy: agave syrup is spray-dried into a thick powder, then granulated and finally mixed with a little maltodextrin to keep it dry. The agave sugar is ready!

Our organic agave sugar has a high sweetening power with a neutral taste and dissolves very easily. That's why it's perfect for many different baking and cooking recipes for which you've always resorted to cane sugar up to now. The possibilities for using sugar from the agave are almost endless: juicy chocolate cakepeanut butter cookiescheesecake, and a refreshing summer drink. Our tip: You can even make your own icing sugar from it. Just put the agave sugar in a blender or coffee grinder and grind it very briefly - you can use it to give your baked treats and desserts a special finishing touch.

Nice discovery

No sooner received than tested. I divide by 2 the weight of the sugar and my pastries are delicious! I find that the taste (more discreet than the sugar) blends wonderfully with the fruit
