If you have no idea of what buckwheat groats are, we are going to enlighten you: they simply are coarsely ground buckwheat grains. Do not let its name fool you: buckwheat is not related to wheat, and is not a grass, but a so-called pseudocereal. Pseudocereals are grains or seeds which can be used as cereals, even though they are not, botanically speaking. Contrary to cereals, they do no contain gluten, and have therefore always been a staple in the kitchen of people who suffer from celiac disease.

Buckwheat groats are incredibly versatile and can serve as a base or side dish for many dishes. Among other things, buckwheat groats can be used to prepare breakfast porridge, which can be spiced up with toppings of your choice. Then there are buckwheat pancakes from Russia, so-called "blini", which can also be conjured up with buckwheat groats. There are also plenty of savory recipes with buckwheat groats if you search for them on the Internet!
There are hearty recipes for buckwheat groats - and not too few of them. As a basic recipe, we recommend the following: Cut an onion into small pieces and fry it in a little vegetable oil. Now your creativity comes into play: fry some vegetables, for example mushrooms. Then add a cup of buckwheat groats. Add 2 cups of boiling water and simmer for 15-20 minutes on the lowest setting.
Our buckwheat groats come from biodynamic farming.
Per 100 grams, buckwheat groats have the following nutritional values: 2.6 grams of fat, including 0.7 grams of saturated fat, 70 grams of carbohydrates, including less than 0.5 grams of sugar, 3.3 grams of fiber and 9.2 grams of protein.
Swell the buckwheat groats with about 3 times the amount of liquid (e.g., vegetable drink or vegetable broth) for 15-25 minutes at a gentle boil until the desired consistency is reached.

Buckwheat originally comes from Asia; arrived in Europe in the early Middle Ages, buckwheat has a short period of growth and thrives on lean soil, but is sensitive to cold. It has been a staple of Eastern European cuisine since ancient times, and Russia is the first documented country to have cultivated buckwheat. In 2017, 3.8 million tons of buckwheat were harvested worldwide. China is the largest producer of buckwheat, followed closely by Russia.
