What can I eat with cress?

The question is rather: What doesn't cress go with? With their pungent aroma, cress seeds have a taste somewhere between radish and mustard. That's why you can use them as a spiced ingredient in soups, dips and sauces or simply sprinkle them on your bread. And cress seeds also add that extra kick to your (green) smoothie.

Sprouting made easy: organic radish seeds

Here are the instructions for success: first soak the seeds for 15 minutes, then pour off the water and put the seeds in a sprouting jar. The small seeds will take 4-10 days to grow into tasty sprouts. The sprouting jar should be placed at room temperature and not exposed to direct sunlight. Rinse the sprouts several times a day with lukewarm water. Growing sprouts is particularly easy with our sprouting equipment: The stand for the sprouting jar and the matching sprouting sieve ensure that there is no waterlogging in the sprouting jar and that the seeds do not become mouldy. In der original verschlossenen Verpackung kannst Du die Samen an einem kühlen, dunklen und vor Licht geschützten Ort mindestens 12 Monate lagern.
Mit dem richtigen Equipment wird selber Sprossenziehen kinderleicht: Zunächst benötigst Du ein passendes Keimglas. Hierfür eignet sich unser Mason Jar mit einem Fassungsvermögen von knapp einem Liter. Um unhygienische Staunässe im Sprossenglas zu verhindern, ist es zudem wichtig, das Keimglas während der Sprossenzucht schräg und kopfüber aufzubewahren. Unser Sprossenglas-Gestell samt Sprossensieb sind eigens für diesen Zweck konzipiert. Die enthaltene Abtropfschale fängt zudem restliches Gießwasser nach der Bewässerung auf. Mit Sprossenglas, Sprossensieb und Sprossenständer bist Du entsprechend ideal für die eigene Sprossenzucht gewappnet. Außerdem kannst Du Dir sicher sein, dass Dein keimendes Saatgut stets frisch und hygienisch bleibt und sich unter idealen Wachstumsbedingungen auf Deiner Fensterbank entwickeln kann.

Einige Sprossensorten verlieren durch das Einfrieren erheblich an Geschmack und sollten deshalb ausschließlich frisch verzehrt werden. Das gilt insbesondere für kleine Samen wie Kresse oder Alfalfa. Andere Sprossensorten kannst Du problemlos einfrieren, ohne dass ihr Geschmack zu stark leidet. Allerdings sollte Dir bewusst sein, dass die Textur durch den hohen Wasseranteil nach dem Auftauen weicher sein wird. In jedem Fall solltest Du Deine Sprossen vor dem Einfrieren blanchieren. Gib Deine gekeimten Sprossen dazu für ungefähr 3 Minuten in kochendes Wasser. Hole sie dann mit einem Schaumlöffel aus dem Topf und gib sie umgehend in eine Schüssel mit eiskaltem Wasser. Die abgekühlten Sprossen sollten in einem Sieb gut abtropfen, bevor Du sie in einem Gefrierbeutel Deinem Gefrierschrank anvertraust.
Bei der Sprossenzucht zu Hause solltest Du darauf achten, Dein Keimglas an einem hellen Ort ohne direkte Sonneneinstrahlung zu platzieren. Die Fensterbank eignet sich – solange direktes Sonnenlicht vermieden werden kann – auch aufgrund der frischen Luft wunderbar. Die ideale Raumtemperatur sollte zum Anziehen von Sprossen bei etwa 20 °C liegen, wenngleich Sprossen und Keimlinge dahingehend nicht ganz so empfindlich sind.
Die Einweichzeit unserer Kressesamen beträgt lediglich 15 Minuten. Danach gießt Du das Wasser ab und gibst die Samen in Dein Sprossenglas. Lasse die Samen 4–10 Tage bei Raumtemperatur auf Deiner Fensterbank, ohne direkte Sonneneinstrahlung, keimen und spüle sie in dieser Zeit täglich durch. Unser Sprossenglas-Gestell und -sieb verhindern dabei Staunässe und Schimmelbildung im Keimglas. Als Faustregel gilt: Sprossen können gegessen werden, wenn der Keimling die 2- bis 3-fache Länge des Samens hat.
Sprossen bezeichnen die frisch gekeimten Samen von Pflanzen. Zur Aufzucht eignen sich bestimmte Getreidearten, Hülsenfrüchte und andere Pflanzen.
Kresse zeichnet sich durch einen besonders würzigen Geschmack aus und verfeinert so herzhafte Dips und Aufstriche. Du kannst Kresse auch als Topping auf Deiner Suppe oder Deinem Brot verwenden oder Deinen Smoothie damit verfeinern.
2 bis 3 Esslöffel Saatgut sind in der Regel ausreichend. Achte darauf, dass die Samen im Keimglas nicht zu sehr aufeinander liegen und genügend Platz zum Quellen haben.
Am besten verzehrst Du die frisch gekeimten Sprossen direkt. Sollte dies nicht möglich sein, kannst Du sie für kurze Zeit im Kühlschrank lagern und sobald wie möglich verzehren. Aufgepasst: Sollte sich Schimmel bilden, müssen die gekeimten Samen umgehend entsorgt werden.
Gesund ist in erster Linie eine ausgewogene und abwechslungsreiche Ernährung. Unsere Kressesprossen überzeugen durch ihren würzigen Geschmack und können als Zutat in Dips, Smoothies und Aufstrichen sowie als Topping auf dem Brot verwendet werden.
Deine Sprossen immer gut im Blick zu behalten, ist wichtig. Sollten sich jedoch zwischen Deinen Jungpflanzen weiße Stellen zeigen, ist das noch nicht zwangsläufig ein Grund zur Sorge. Bei den weißen Härchen, die an den Samen entstehen, handelt es sich nämlich meist um sogenannte Mikro-Wurzeln. Die sind harmlos und würden normalerweise in der Erde wachsen. Schimmel hingegen taucht zunächst nur an einer Stelle auf und breitet sich dann über die nächsten Tage langsam aus.
