A total of 8.2 million tons of dates were harvested in 2017. The top 10 producers harvested 89 percent of this amount. Most of the dates are processed directly in the countries of origin. Along with the dried fruits, date oil and date liquor are also widely produced.
Production
Der Großteil der Medjool-Datteln aus Isreal kommt aus dem sogenannten "Jordan-Valley". Der Jordan ist ein abgesenkter Fluss, der von Felswänden umgeben ist. Durch die Reflektionen erreicht das Tal Temperaturen weit über 40 Grad Celsius.
Damit die Medjool-Datteln schön groß werden, werden die Reben frühzeitig ausgedünnt. So stehen weniger Datteln einer Rebe in gegenseitiger Konkurrenz und die einzelnen Datteln haben mehr Nährstoffe, um sich voll auszubilden.
Erst wenn die Datteln von allen Seiten leicht durchsichtig sind, werden sie geerntet.
Bei unserer Reise zur Plantage von "Natura Dates" haben wir Jeannie kennengelernt. Sie setzt Eulen ein, um Schädling im Bio-Anbau zu bekämpfen und hält damit die Dattelbäume gesund.
So sehen die Medjool-Datteln direkt nach der Ernte aus.
Die Bonbonera ist die saftigste aller Medjool-Datteln. Sie wird direkte nach der Ernte schockgefroren und überspringt dadurch den Trocknungsprozess.
Bevor die Medjool-Datteln in die bekannten 1- oder 5kg-Kartons gepackt werden, werden sie getrocknet. Die Zuckerkonzentration erhöht sich, wodurch die Dattel haltbar und transportfähig wird.
Nach der Trocknung werden die Datteln sortiert. Man unterscheidet zwischen Jumbo, Large und Medium. Im Allgemeinen gilt: je größer, desto teurer! Geschmacklich nehmen sich die Größen aber nichts.
Das wichtigste Qualitätskriterium bei Medjool-Datteln ist die Loose-Skin-Rate. Sie gibt den prozentualen Anteil von abgeplatzter Dattelhaut wieder. Je weniger, desto teurer.
