We use special roasted maize for our roasted maize kernels. We roast it with vegetable oil and refine it with spicy chilli seasoning made from oregano, dried tomato, onion, paprika, cumin and salt. The taste explosion is pre-programmed. Not all maize can be roasted, it depends on special properties: the texture of the husks ensures that the kernels do not pop like popcorn when roasted, but "grow" to about twice their size.
