What is shawarma?

Shawarma is an Arabic version of the revolving skewer dishes common throughout the eastern Mediterranean. The outer, browned layers are thinly sliced from the grilled skewer, which is layered with meat, and served with other garnishes in rolled pita bread. Shawarma is eaten mainly in the Middle East, from Lebanon to Jordan and Israel to Egypt. Shawarma differs from Turkish Dürüm Döner and Greek Gyros Pita mainly in the marinade used.
